| Harvesting and wine making | The quality of the grapes is maximized by a manual harvest carried out at sunrise when the temperatures are still cool. After a quick and light pressing, the juice is cooled, clarified and cold fermented with a special yeast to improve the extraction of the varietal aromas. The wine is then left for 2 months in contact with the lees and filtered to preserve its freshness and fruity notes before being bottled. |
